It's hard to put these squares in a particular category... Is it a snack, is it a dessert? It's probably easier to agree on "little sweet". These bite-sized treats made from plant-based ingredients are sure to satisfy your sweet tooth. Enjoy!!
Ingredients:
- ½ cup dates
- 1 cup of oats
- ¼ cup shredded coconut
- ¼ cup sliced almonds
- 1 tablespoon maple syrup
- 1 tablespoon coconut oil
- 1 pinch of salt
Topping ingredients:
- 1 cup raw, unroasted cashews
- 1 cup coconut cream
- ¼ cup maple syrup
- 2 tablespoons coconut oil
- 1 lime (juice and zest)
- 1 teaspoon Water lentils powder
Instructions: :
- Soak cashews in cold water for 1 to 2 hours, then drain.
- Line a 20 cm X 20 cm baking pan with parchment paper, leaving a little excess on the sides.
- In a food processor: mix all ingredients (except for the topping).
- Place the mixture in your pan and press firmly with your fingers to cover the entire surface. Set aside in the fridge.
- In a blender, add all the topping ingredients except the Water Lentils powder. Blend until smooth and creamy.
- Pour half of the topping over and let sit in the refrigerator for 30 minutes.
- Add the Water Lentils powder to the remaining topping and mix again. Pour the remaining mixture into the pan and let sit in the refrigerator for 3-4 hours.
- Cut into squares! For a nice presentation: decorate with shredded coconut, lime zest or slices!
Storage: refrigerate for 3 to 4 days
