It's hard to put these squares in a particular category... Is it a snack, is it a dessert? It's probably easier to agree on "little sweet". These bite-sized treats made from plant-based ingredients are sure to satisfy your sweet tooth. Enjoy!!
Soak cashews in cold water for 1 to 2 hours, then drain.
Line a 20 cm X 20 cm baking pan with parchment paper, leaving a little excess on the sides.
In a food processor: mix all ingredients (except for the topping).
Place the mixture in your pan and press firmly with your fingers to cover the entire surface. Set aside in the fridge.
In a blender, add all the topping ingredients except the Water Lentils powder. Blend until smooth and creamy.
Pour half of the topping over and let sit in the refrigerator for 30 minutes.
Add the Water Lentils powder to the remaining topping and mix again. Pour the remaining mixture into the pan and let sit in the refrigerator for 3-4 hours.
Cut into squares! For a nice presentation: decorate with shredded coconut, lime zest or slices!
