Water lentil, lime & coconut energy balls

This time, Stéphanie has created lime coconut energy balls with Water Lentil. These balls will not only give you a little "boost" but will put some sunshine in your heart!

So, here it is, without further ado:

For 16 balls:


-1 cup of unsweetened shredded coconut + 1/2 cup for coating

-1/2 cup of rolled oats

-1/2 cup of cashews

-The juice and zest of a lime

-1 tbsp. of maple syrup

-1/2 cup of dates (soaked 5 minutes in boiling water)

-1 scoop of Water Lentil powder


  1. Start by soaking the dates in boiling water for 5 minutes.
  2. Meanwhile, add the coconut (1 cup), oatmeal and cashews into the food processor and pulse until granulated.
  3. Add all other ingredients and pulse again to obtain a sticky dough.
  4. With a tablespoon, make 16 balls of dough and roll it in the shredded coconut.
  5. Enjoy! Keeps up to 1 week in the refrigerator in an airtight container.
