We got in touch with Sara from Ma cuisine de tous les jours to create a recipe with Water Lentil that will be a good fit for the whole family. She came up with the original idea of creating a snack like a « bounty » chocolate bar. Yes, that’s right, like the famous chocolate bars that were so popular in the 90s! Remember their ads on a paradise island? This recipe will warm your heart with the taste of coconut buried under a mountain of chocolate! Perfect as a snack and practical to bring in lunch boxes or for your long days biking or hiking.
This snack is easy, delicious, and become instantly healthier by adding Water Lentil into the recipe. It will add vegan protein, vitamin B12 and essential antioxidants that will help you on your quest for greatness and get your vitality back!
For 12 bars :
Ingredients:
-1 1/2 cup of rolled oats (oatmeal)
-1 cup of of unsweetened shredded coconut
-3 tbsp. of cocoa powder
-1 1/2 tbsp. of Water Lentil powder
-2 tbsp. of chia seeds
-2 tbsp. wheat germ (or ground flaxseeds)
-1 cup of chopped dates
-3 tbsp. of maple syrup
-1 tsp. of vanilla extract
-1/2 cup of dark chocolate chips
Preparation:
1. Start by chopping your dates. Cover them with 1 cup (250 ml) of water and put in the microwave for 1 Minute and 20 Seconds. Drain. Set aside.
2. Pour the oat flakes, coconut, cocoa, Water Lentil powder, chia seeds, wheat germ - (or ground flax seeds) into a food processor and pulse until everything is mixed and finely chopped. Then add your rehydrated dates, maple syrup and vanilla extract and pulse a few more times until the dough starts to blend. Finally, add the dark chocolate chips and pulse a bit until they are chopped and well mixed with the rest of the dough.
3. Divide the mixture evenly into 12 muffin cups and gently crush it with your hands. Let stand in the refrigerator for about 30 minutes and carefully unmoulding (with a knife). Keep the bars in the refrigerator or in the freezer for later use.
