Here is a 100% vegan and gluten-free no-bake dessert. This water lentil and coconut no-bake pie will not only please your taste buds, but will provide you with the necessary nutrients that will help your immune system function properly.

Ingredients :
No-bake crust :
-1 cup of walnuts
-3/4 cup of dattes
-2 tbsp of coconut oil
-Pinch of sea salt
Water lentil and coconut filling :
-1 cup of cashews, previously soaked (a few hours or overnight)
-1/4 cup of maple syrup
-5 tbsp. of coconut oil
-1 tbsp. of water lentil powder
-Pinch of sea saltr
Preparation :
- Soak the cashews the day before.
- The next day, rinse the cashews and put them in the blender.
- Prepare the no-bake crust by adding all the other ingredients to the blender.
- When you have a nice sticky texture, press the mixture into a pie plate and refrigerate for 1 hour..
- For the water lentil and coconut filling, add all ingredients to the blender and blend until you get a smooth texture.
- Then add the filling on top of the no-bake crust and refrigerate again for 2h.
- Remove from the refrigerator and enjoy!
